Molten Chocolate Lava Cake

Her website is splattered with delicious treats, varying between savory and sweet. Thought I'd share this particular post from Mrs. Ree.  The rain today stirs up cravings for bittersweet, rich, warm and creamy notes.  I crave severely, and for what?  An aromatic blend between dream and realty, Molten Chocolate Lava Cake.  One bite is all it takes to send you down a spiral of orgasmic tastes.  There's something rather sexy about driving your fork into a delicate cake, releasing steam, and watching warm melted chocolate ooze it's way down your plate.  Don't believe me?  Try it out for yourself.  

One more thing, for all you non-chocolate lovers, take this wondrous dessert and pair it with your favorite mix of berries.  You will definitely think of chocolate in a whole other light.

Welcome Baby Esteban!!

I am pleased and honored to be a part of Baby Esteban's beautiful celebration!  Welcoming a new addition is always such a blessing- Baby showers are a delight!

The theme you ask?  Why, baby jungle themed of course!   

Along with four nutella cream and pineapple coconut fondant draped cakes, we also provided a delicious buffet assortment of flan, tarts, assorted cookies, macaroons, chocolate draped bite-sized cream puffs, and blueberry parfaits.

Although I had an amazing time baking everything, it looks as if it were more fun eating them!  Cheers to baby Esteban!  And congratulations to Mommy and Daddy!

I am excited to re-introduce a part of my business I am so very passionate about!  Before I injured my hand earlier this year, I was cooking full time for a client base of individuals sourcing healthy meals.  Unfortunately, it was difficult and not safe to cook with an injured hand and I was left having to say goodbye to my clients for a bit.

Fruitfully Fall

Fall is fast approaching.  The hot summer days have been dramatically cooling down in the evenings, leaving a hint of crispness in the air.  Although I am sad to see summer slowly fade away, Fall seems to be one of my favorite seasons.  The air is brisk, the smells are warm, and the food is touching to the soul.  Cinnamon-Spice and everything nice. 

Most people notice when Fall creeps its way once Halloween decor starts popping up shelves, or when the usual weather starts to change.  Not I...

My excitement grows once the trees in the yard start bearing delicious Apples, the first seasonal round of Figs, and beautiful Persimmons. Beets and Chard flood the markets in golden colors of yellow, red, and purple.  The trifecta of color, taste, and indulgence at your very fingertips. Fresh cranberries, delicious grapes, and bright shiny eggplants!  Now although living in Southern California we can find most of these fruits and vegetables year round, do not dare disregard.  The quality and taste of these seasoned items are at their peak and it is the best time to break open your fall recipe bank.  

If cooking seems to intimidate you, visit a local restaurant that has a seasonal changing menu.  Believe me; you will notice the difference in sweetness, texture, and its lavish color.  Your local gardens have so much to offer, make sure you use the means to taste the season.  

When I lived in the city, I always looked forward to Saturdays.  Little Italy, in my opinion, offers one of the best Certified Farmers Markets in San Diego.  And until you experience it for yourself is when you'll know what I am talking about.   You'll find farm raised meats, entertainment, extravagant pastries, delectable eats, handmade everything, and of course a beautiful spread of fruits and vegetables!

WARNING: EpicMealTime Candy BBQ. OMG.osh!

Let me start off by saying....WOW!  When I was first introduced to EpicMealTime, I didn't know how to react.  Clever-yes, enticing, not so much.  The main stars of these cooking videos aren't so much the personalities, but the ingredients. 

WARNING: For those faint and easily grossed out (yes I said it), be cautious.  These Videos will cause you to gasp and probably cause gastronomical trauma. 

Introducing the cast of  EpicMealTime: BACON, BACON FAT, FAST FOOD CONDIMENTS, JACK DANIELS, HAM, SAUSAGE, and the boys who dare to be bold.  I at first couldn't stomach the mess that came out of that kitchen.  Really?  I mean...is that really food?  

Although my heart litterally stops EVERYtime I watch any of their videos, I can't seem to take my eyes off the screen.  I am pretty sure there are thousands out there that feel the same.  Every fat induced recipe intrigues me and creates curiosity.  These guys are definitely creative, daring, and fat at heart.  

Cooking entertainment taken to a whole new level!

Serious Epidemic

OBESITY

PRONUNCIATION: ō-bē′si-tē

MEDICAL DEFINITION: "1. an excess of subcutaneous fat in proportion to lean body mass. Excess fat accumulation is associated with increase in the size (hypertrophy) as well as the number (hyperplasia) of adipose tissue cells. Obesity is variously defined in terms of absolute weight, weight: height ratio, distribution of subcutaneous fat, and societal and esthetic norms. Measures of weight in proportion to height include relative weight (RW, body weight divided by median desirable weight for a person of the same height and medium frame according to actuarial tables), body mass index (BMI, kg/m2) and ponderal index (kg/m3)."  (Read entire definition provided by www.medilexicon.com)

In layman's terms, FAT seems to be the new trend.  To offend is not my goal, but to bring awareness IS.  Obesity has become a widespread epidemic amongst our population.  Weighing heavily on our health, it is now the single leading most preventable cause of death amongst us worldwide.  An epidemic to say the least.  Studies have shown that obsessive amounts of weight gain may be hereditary, but can also be managed.  With routine exercise, a healthy well-balanced diet, and a good mindset, you can fight off feelings and disease.  Not only does the body react with the possible development of heart-related disease, type-2 diabetes, difficult breathing issues while sleeping, forms of cancer, but also by changing the overall health of the mind.  One's body image becomes morphed possibly leading to lack of self confidence and at times depression.  

WHO (World Health Organization) released a current shocking statistic stating that "More than 220 million people worldwide have diabetes."  At least 20% of us here in the United States over the age of 60 have developed diabetes, with numbers climbing amongst the young and old alike.  With numbers like this, wouldn't we think to cause change?  I recently taught a class on cooking healthy and polled my attendees.  Most all of them either had diabetes or knew of someone close to them that did.  It was shocking for them to see but not surprising to me.  Although my passion has recently taken its sugary route, my passions do not stay rooted on that path.  Health is a major concern of mine and I admit there are times I feel guilty for contributing to this rash.  But in my eyes, "Balance" is essential to living a healthy lifestyle, and being able to still enjoy delicious tastes.

 

Reminder!  Here are a few simple, no-brainer, guidelines for weight management.  Remember, I am not a doctor, and although I have helped many shed pounds, please always consult your Doctor for any drastic changes or additions to your current diet.  

 

  • Think lifestyle change, not short-term diets
  • Find your cheerleader!  In other words, your accountability partner!
  • Eat less processed foods AND rid your diet of soda
  • Exercise as much as possible, even if it means parking further away and walking a bit longer to get to where you need to get to
  • Portion out your meals! ADDING more fresh fruits, grains, and vegetables to the menu

Cooking with the Dog?

One of my favorite cooking shows is found online.  As odd as it sounds, the title of the show is called "Cooking with the Dog".  Yes, there actually is a dog in the shot, his name is Francis.  Francis likes to hang out as a narrator while his "assistant" performs the cooking demo.  What intrigued me about these videos was not the Dog.  Okay, maybe just a bit, but what really intrigued me were the techniques!  

Mind the dog, this woman's knife skills and gentle techniques can really cook up a delicious tasty-traditional meal!  Everything from appetizers, soups, main dishes, bento boxes and even dessert!  Examine her, be entertained, sit back and learn how it's really done in a Japanese Kitchen.

Official National Strawberry Sundae Day!

Although it is a bit later in the evening, there is never a wrong time of the day to celebrate today's official National Holiday! Happy National Strawberry Sundae day! For most ice cream connuesuers, this hidden holiday has become increasingly popular as the years pass by. While some throw small in home get togethers, others lavishly arrange Strawberry Sundae Socials. Either which way you choose to celebrate, all would agree that the marriage between luscious Strawberries and cold creamy ice cream are a pair made in heaven.

The strawberry itself, is packed with vitamin C, antioxidents, health fighting benefits and delicious flavor. Although the official strawberry season has already launched, we here in Southern California forget how precious these fruit gems are. Okay, yes we are lucky, strawberries are grown and sold here all year round. It is not so for some states across the nation.

What is your ideal Strawberry Sundae? Mine- a homemade strawberry compote, organic vanilla bean ice cream, chocolate drizzle, a dobble of sweet caramel sauce, a vanilla wafer, and let us not leave out that sweet fluffy pillow...fresh whipped cream!

So today, tonight, and even all throughout tomorrow...let us pay homage to a good ol' fashioned Stawberry Sundae. whether you enjoy yours plain and simple, or fancied to the core, pick up your favorite spoon and get to it!

Following the "Dream"

Times have been sweet.  Pounding out samples of bite sized goodies, I've not only catered to those partaking in celebrating life through Birthdays, Matrimony and other Life Milestones, but now it is time to take on the ultimate of my own.  

 

In works:  I come together with Popper Foods!  If you haven't heard of these bad boys, Sushi Popper will revolutionize our food industry.  Taking dives into unimaginable depths of daring concepts.  Frozen sushi out of a push tube- what?!  Most Sushi Coinsures would consider this Blasphemy!  Flash frozen sushi has been a growing trend in Japan and will soon flood the markets here in North America.  Make no mistake that these tasty treats are natural and once thawed, taste delicious.  

Sushi itself is a staple along the coastal areas of the United States, and throughout the nation.  In fact, the creative genre of California sushi has become ever so in-demand in Japan.  What a trade off of ideas.  Frozen sushi for us, and California sushi for them!  

A Dream I once had was to be able to partake in a revolutionary movement.  A movement that will take food as we know it now, to the next level.  Sourcing a dream to educate, influence, and feed the masses.  Sushi Popper- Popper Foods has now been seriously looking at expanding their line.  Providing the consumer with bite sized sweets packed with a lot of love.  That's where Food High comes in.  I am overjoyed and pumped up to have the opportunity to be working with such a creative bunch!  Hopefully my delicious bites will touch the palettes of not just one, but hundreds of thousands possibly millions.
